Oniomaniac
I’m an Oniomaniac! I am in this phase where I want to put a ton of onions on everything I eat. Anyone want to sit next to me and have a long conversation? Yeah baby, the onions are going down like candy! I like talking about food and if I could do things over again I may have gone to school for culinary. Here’s my killer sandwich featuring some onions. I learned this one from my great grandmother who has passed on now. She was from Italy and was born in 1896. She was old school to say the least. She made me a sandwich once that was to die for and it’s really simple but different and good. You simply boil a couple of eggs, hard boiled that is. Then, you slice them and put them on a piece of bread. Sliced, not mashed up. OK, now you slice some onions and put a few of those babies on there. Now you take a tomato and cut a couple fresh slices and lay that on top of the egg/onion. To finish up you just salt and pepper to taste and, here’s the trick folks, you drizzle a little olive oil on it. Add the top piece of bread and there you go. An authentic old fashioned Italian egg sandwich.
